- 3 ½ pounds fresh heirloom tomatoes, seeded and coarsely chopped
- 1 ½ cups onion
- 8 cloves garlic, coarsely chopped
- Bunch of fresh herbs, oregano, basil, parsley
- 1/3 cup olive oil
- Salt and pepper, to taste
Preheat the oven to 375 F. Mix all ingredients in big bowl, transfer to baking dish. Roasted for about an hour. Blend tomatoes to puree in a food processor. Add salt and pepper seasoning to preferred taste. It is ready to use now.
To preserve the sauce for winter: Pour in a sterile glass containers and seal or freeze the sauce in a plastic container.
