Gluten Free Plantain "Flax" Pancakes

Gluten Free Plantain "Flax" Pancakes (1 serving)

2-3 inch of green plantain (or ½ banana)
1 egg (from range-free chicken)
3 Tbs. ground flaxseed
¼ tsp. sea salt
¼ tsp. baking soda

1 Tbs. protein powder (optional)
You may need add some water for consistency of the batter
Coconut oil for the pan

For garnish:      
Nut butter, fresh or frozen blueberries (or banana), and 1 Tbs. honey (or maple syrup)

 

1. Peel plantain (you may need to slice the green skin off with a knife instead of peeling off the layer like you might a banana) and shred it by hand or with a small food processor.

2. Add the shredded plantain, egg, ground flaxseed, salt and baking soda to the food processor. Mix properly all these ingredients in food processor until smooth batter forms.

3. Grease a skillet and place over medium heat. Once the skillet is hot, divide the batter to pour 2 pancakes. The pancakes should cook on each side for 3-4 minutes.

4. Top with nut butter, fresh or frozen blueberries, and drizzle some honey over.
